Translates into 386.4 per day or 96.6 logs every day. In order to keep up with this I need to spend around 12h every day chopping wood to make up for what my lumberjack lacks in production.

It's a known fault. Something in the code is broken, and for an unknown reason none of the farmers will recognise a field. It's usually only one task, so if you harvest, they'll start fertilising.
